Plated Desserts: Brunch and Tour Prep
As part of our Plated Desserts class, we not only make and serve the desserts for our restaurant’s lunch and dinner services, but we also prepare desserts for the weekly tours that come through the school, and also some of the desserts for Sunday brunch.
The weekly tours are for prospective and admitted students, and usually we make about five to six different desserts, with about 50 pieces each, and they are used for the dessert course after we feed the tours!
As for Sunday brunch, the dessert table is always a lovely spread. There are small plates of about 10 pieces of delicious chocolate, cookies, mini-cakes, mini-custards, basically everything mini.
