This is our final new cold app. It’s house smoked salmon, pressed into a square form. It’s hot smoked, which is why it looks a little bit more like tuna then cold smoked salmon.
The smoked salmon is mixed with sour cream and chives, and topped with shaved hard-boiled egg. We top it with frisee and shaved radish (with lemon olive oil dressing). The circle around is salmon roe and fennel oil.
I love the smoked salmon because it’s nice and salty, and the frisee works really well, too.
Now if only I had a bagel…
