Charcuterie at home!

My duck prosciutto is done. It turned out well. I’m pretty happy with it. It tastes like prosciutto (pork), but it lacks the swiney taste regular prosciutto sometimes has.

At work today, I sliced prosciutto and pastrami (housemade), and also had the opportunity to grind beef scraps. Lots of work with meat!
